- 5 lb. chicken
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- fresh herbs (rosemary, thyme, or oregano)
- 1 garlic clove, peeled and cut in half
- 1 small onion, peeled and quartered
- 4 slices lemon zest
- 1 tablespoon fresh lemon juice
- 1 tablespoon virgin olive oil
1. Place the rack in the toaster oven in the lowest position, ensuring the chicken will fit inside with plenty of clearance above. Preheat the oven to 400 degrees F using the Roast preset.
2. Remove giblets and neck from chicken (if still present), and rinse chicken thoroughly with cold water. Pat dry.
3. Place baking rack into broiling pan filled with ¼ cup of water, spray with cooking spray.
4. Tuck the wings under the chicken and place into baking pan. Rub salt and pepper into the body of the chicken, including inside the cavity. Place the various herbs along with the lemon zest, onions, and garlic inside chicken.
5. Tie the legs together, then rub the outside of the chicken with the olive oil, along with the rest of the salt and pepper. Drizzle with lemon juice.
6. Put the chicken in the oven and roast it for 20 minutes at 400 degrees F. After the 20 minutes is up, lower the temperature to 375 degrees F and roast for longer, depending on the size of the chicken. Add 12 minutes per each pound of chicken (roast 5 lb. chicken for 60 minutes).
7. Inside of chicken should be 170 degrees F when finished, juices should be clear.
8. Remove chicken from oven and let sit for 10 to 15 minutes before serving.

- ¾ cub brown sugar
- ½ cup granulated sugar
- 1 whole large egg and egg yolk
- 1 tablespoon vanilla1 cup of cake flour
- 1 ½ cubs of all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 cups of chocolate chips
1. Preheat oven to 400 degrees on the Bake preset.
2. Line baking sheet with parchment paper.
3. In mixer bowl, add butter, brown sugar, and granulated sugar. Start mixing on low setting, then gradually increase to medium-high, mixing for about 3 to 4 minutes. Contents should be fluffy.
4. Set mixer to low and add egg, egg yolk, and vanilla. Turn mixer to medium and mix for about 30 seconds, until contents are well mixed.
6. Turn off mixer, then add cake flour and all-purpose flour, salt, baking soda, and baking powder. Turn mixer on low and mix until it is loosely combined. Be careful not to overmix!
7. Add in chocolate chips and knead them into the dough until they are mixed in evenly. Create small balls of dough roughly 2 oz in size, then place evenly on the baking sheet, around 2 inches apart.
8. Bake in convection oven for 4 to 5 minutes, until dough has flattened out and browned. Remove from oven and let cool for 2 to 3 minutes before placing on wire racks.
